Mochi Waffles For A Gluten Free Lifestyle

It all started with “waffle-nights at mom’s house”—I’d invite my son and daughter over for nighttime feasts of mochi waffles, whipped cream, and fresh fruit. I had developed a gluten free waffle recipe to accommodate my son’s request for a gluten free, dairy-free treat (we had all developed these food sensitivities as adults). Friends and family tried the waffles, raved about them, and said that I should sell them; I had a lot of encouragement. For several years it was just an idea, then during the pandemic I told my daughter that I wanted to sell them at farmers markets, but that I couldn’t do it alone!

With my daughter by my side, we brought our gluten free waffles to the Farmlovers Farmers Market on O‘ahu, setting up in both Kaka‘ako and Kailua. What began as a small family project quickly grew into something bigger, thanks to the love and support of our community. That’s how ‘Aiwi Waffles was born—out of a mother’s kitchen and a family’s love for creating clean, nourishing food. Today, ‘Aiwi Waffles is still family run, rooted in care, and built on the simple joy of making gluten free food that brings people together.

As demand for ‘Aiwi Waffles grew, we knew it was time to take the next step—expanding from our farmers market roots into a full-fledged food truck. This exciting move gives us the freedom to bring our signature gluten free waffles to more people across O‘ahu through pop-up events, catering, and community gatherings. Staying mobile and flexible allows us to share our gluten free, seed oil free creations far beyond our weekend markets. With the ‘Aiwi Waffles food truck, clean eating and island flavor are always just around the corner.
